Pasta salad with radishes, spring onions and apples

Ingredients for 4 servings:

  • 500 g pasta
  • 1 bunch of radishes
  • 1 bunch of spring onions
  • 2 m.-sized apples
  • 5 m.-large gherkins
  • 500 ml mayonnaise (salad)
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 40 minutes

As a side dish to meat, meatballs, grilled food but also delicious on its own.

Cook the pasta in lightly salted water, drain, and let cool thoroughly. Add the salad mayonnaise and stir gently. Trim and wash the radishes. Trim and wash the spring onions – only the onions are used. Peel the apples and remove the cores. Thinly slice the radishes and spring onions. Cut the apples and gherkins into small pieces or thin slices. Add everything to the pasta and mix together. Season with salt and pepper and mix well again. Refrigerate until ready to serve. Store leftovers in a tightly sealed container in the refrigerator until the next day.
