Hearty cheese soup

Ingredients for 3 servings:

  • 500 g minced meat (half and half)
  • 3 onions
  • 1 can of mushrooms
  • 1 stalk(s) leek or spring onion(s)
  • ½ cream cheese spread
  • ½ processed cheese, with herbs
  • 1 liter of broth
  • some flour OR:
  • 1 piece(s) cheese (Gouda) to thicken
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the minced meat and onions. Add the mushrooms and leek/spring onions and sauté briefly. Deglaze the minced meat mixture with the broth. Add the processed cheese and simmer until the vegetables are tender and the soup has reduced slightly. Finally, thicken the soup with flour or, better yet, a piece of Gouda cheese. A French baguette or garlic baguette goes perfectly with this.
