Spicy tomato sauce with chorizo

Ingredients for 4 servings:

  • 250g chorizo
  • 1 large onion(s), chopped
  • 4 garlic cloves, chopped
  • 2 cans of chopped tomatoes (400g cans)
  • 200 ml red wine
  • 1 chili pepper(s), red, if desired
  • salt and pepper
  • Paprika powder, hot
  • 1 tbsp tomato paste

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cut the chorizo ​​into thin slices. Fry the sausage in a heavy pan until the edges curl upwards. Now add the chopped onions and garlic cloves and deglaze with red wine. Bring to a boil and add the diced tomatoes and their juices to the pan. Continue simmering the sauce and season with tomato paste, salt, pepper, paprika, and, if desired, a finely chopped chili pepper. This sauce pairs well with short pasta.
