Grandma's potato soup

Ingredients for 3 servings:

  • 1 kg potatoes
  • 1 pack of lean bacon, diced
  • 1 onion(s), large
  • 1 clove(s) garlic
  • 1 can of sausages
  • some Maggi
  • 1 tsp parsley
  • Salt
  • Oil, for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Fry the bacon in a pan until crispy. In the meantime, peel and dice the onion and finely chop the garlic clove. Also finely chop the sausages. Now add the onion, garlic, and sausages to the pan and fry until the onions are translucent. Add a few drops of Maggi. Meanwhile, boil the peeled and chopped potatoes with a little salt. When the potatoes are tender, do not drain the water. Mash the potatoes in the potato water with a potato masher. Then add the fried ingredients from the pan to the potato water and stir. Turn off the heat and let it stand for half an hour. Finally, add the finely chopped parsley to the soup and season to taste.
