Potato soup with chopped beans

Ingredients for 6 servings:

  • 400 g potatoes
  • 1 onion(s)
  • 30 g butter or margarine
  • 1 liter vegetable broth
  • 1 jar of beans (green beans), approx. 330 g
  • 200 g coffee cream
  • 125 g diced ham
  • salt and pepper
  • marjoram

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Peel, wash, and dice the potatoes. Peel and dice the onions, then sauté them with the potatoes in butter or margarine. Pour in the vegetable stock and simmer the potatoes, covered, for 15 minutes. Drain the beans. Purée the potatoes and onions in the stock with a hand blender. Add the coffee cream and beans, and simmer over low heat for another 15 minutes. Stir the soup frequently to prevent burning. Fry the ham cubes in a pan without fat, then drain on kitchen paper. Add the cubes to the soup. Season the soup with salt, pepper, and marjoram.
