Ingredients for 2 servings:

  • 300 g mashed potatoes (leftovers)
  • 1 pack of frozen mixed vegetables (French-style stir-fried vegetables, 450 g), cooked
  • 150g salami
  • 150 g fried onions from the can or 1 large onion cut into rings, deep-fry in oil
  • Emmental cheese, grated, amount to taste

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

In a small casserole dish (mine is 18 cm in diameter and 8 cm high), cover the bottom with puree. Spread the roasted onions on top. Serve the cooked pan-fried vegetables on top. Sprinkle the finely chopped salami pieces on top. Then add another layer of puree and top with more roasted onions. Sprinkle grated cheese on top to taste. Then bake in a preheated oven at 200°C (top/bottom heat) on the middle rack for approximately 20-30 minutes.
