Oriental tomato soup with minced meat

Ingredients for 4 servings:

  • 500 g minced meat
  • 1 jar of ajvar
  • 2 cans of tomatoes
  • 1 large onion(s)
  • 1 garlic clove(s)
  • 1 chili pepper(s)
  • 400 ml vegetable stock
  • 1 pinch(s) fennel seeds
  • 1 tsp cumin
  • 3 tbsp rapeseed oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Season the minced meat with salt, pepper, a generous pinch of ground cumin, and a tablespoon of ajvar, then form into meatballs. Heat the oil in a saucepan. Peel and chop the onion and garlic, and sauté them with the chopped chili pepper in the oil until translucent. Add salt, pepper, cumin, and fennel seeds. Deglaze with the vegetable stock and add the canned tomatoes. Bring the soup to a boil, then add the remaining ajvar and simmer for 10 minutes. Purée the soup and add the meatballs. Simmer over low heat for 10 minutes until tender. Season to taste with salt, pepper, and cumin.
