Ingredients for 4 servings:
- 6 tomatoes
- Salt and pepper, black
- 2 large slices of toast
- 125 g mozzarella, diced
- 50 g Parmesan, grated
- 3 garlic cloves, finely chopped
- 1 small shallot(s), finely diced
- 3 tbsp olive oil
- n. B. Fresh herbs (parsley, basil, thyme …)

great as a barbecue side dish
Preheat the oven to 180°C fan/convection oven. Halve the tomatoes, remove the stems, and place cut-side up in a baking dish. Sprinkle with salt and pepper. Bake for 8 minutes. Meanwhile, blend the bread in a food processor and transfer to a bowl. Add the mozzarella, Parmesan, garlic, shallot, olive oil, and a few freshly chopped herbs. Mix everything together with a spoon, gently pressing. Spread the mixture over the tomatoes. The best way to do this is to firmly squeeze some of the mixture in your hand, place it on the tomatoes, and then press down gently. Bake in the oven for another 10-13 minutes until golden brown.
