Slow Cooker Potato Cream Soup with Bacon

Ingredients for 1 servings:

  • 750 g potatoes
  • 6 slice(s) bacon, smoked
  • 1 onion(s), finely chopped
  • 2 cans of concentrated chicken broth, total approx. 1 liter
  • ¼ liter of water
  • ¼ liter of milk
  • ¼ liter cream
  • 1 can of condensed milk, approx. 250 ml
  • ½ tsp dill, dried
  • 2 tbsp flour
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 7 hours; Total time approx. 7 hours 10 minutes

Fry the bacon until crispy and drain on a paper towel. Peel and finely chop the potatoes. Add them to the slow cooker along with the bacon, onion, broth, water, and dill and simmer on low for about 6-7 hours. Mix the flour with the milk, cream, and condensed milk and add. Simmer for another 30 minutes. Purée briefly with an immersion blender if desired. Season with salt and pepper and serve.
