Lime ice cream made from yogurt and quark

Ingredients for 1 servings:

  • 250 g natural yogurt
  • 250 g quark, 40% fat
  • 2 limes, the juice
  • 80 g sugar
  • 150 ml milk

Instructions

Working time approx. 10 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 10 minutes

Halve the limes and squeeze out the juice. You’ll need about 40 ml per lime if using bottled juice. Weigh the remaining ingredients and mix everything with the juice until the mixture is smooth. If the ingredients are thoroughly chilled, you can pour the mixture straight into the ice cream maker; otherwise, it will need to rest in the fridge for a few hours. If you don’t have an ice cream maker, you can freeze the mixture for 5 hours, removing it from the freezer every 30 minutes and stirring it by hand. If you don’t want to thaw it in the fridge for a long time when storing it in the freezer, you can use cream instead of milk. However, the taste will not be quite as refreshing.
