Ingredients for 4 servings:

  • 8 m.-sized eggs
  • 3 tbsp milk

  • nutmeg
  • 1 kg minced beef
  • 1 tsp mustard
  • 1 m.-sized egg(s)
  • 4 medium-sized onions, diced
  • salt and pepper
  • 300 g chanterelles
  • 1 medium-sized onion(s), diced
  • 3 spring onions
  • 1 tbsp parsley, flat, chopped
  • Vegetable cream for frying

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Rustic omelette with hearty minced meat and chanterelle filling.

Knead the minced meat with the egg, diced onions, and mustard. Season with salt and pepper. Then fry until crumbly. Mix the chanterelles, diced onion, sliced ​​spring onions, and parsley. Season with salt and sauté with the vegetable cream. Whisk the eggs with the milk and season with salt, pepper, and nutmeg. Heat the vegetable cream in a pan and fry the omelet mixture in batches on both sides. Tip: Preheat the oven to 150°C (top/bottom heat) to keep the finished omelets warm while cooking. Fill the omelets halfway with the minced meat and half with the chanterelle filling and fold them shut. Serve with a green leaf salad.
