Ingredients for 1 servings:
- 1 small zucchini, size according to hunger
- ½ onion(s)
- 3 large king oyster mushrooms
- 120 g sausage (city sausage, Lyoner or similar)
- 2 eggs
- some salt and pepper
- possibly herbs, e.g. parsley or chives
- some oil for frying
- possibly chili flakes
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 18 minutes
Can also be prepared vegetarian, instructions in the preparation
Wash and chop the zucchini. Clean and chop the mushrooms, if desired. Chop the onion if desired. Dice the city sausage (regional), Lyoner sausage, or similar. Heat the oil and possibly a knob of butter in a pan and fry the vegetables, mushrooms, and sausage. Depending on how firm you want them to be, this will take about 5 minutes. Then season; if you like, you can also add a bit of chili. Crack 2 eggs over the zucchini, mix everything well, and fry until the eggs are set. Sprinkle with herbs if desired. This also tastes good with fried potatoes (if you don’t want to go low-carb) and BBQ sauce. If you want this dish vegetarian, leave out the sausage (then add a bit more vegetables and mushrooms), or use tofu, my vegetarian minced meat (available in the DB), or vegetarian sausage.
