Potato soup with sausages

Ingredients for 2 servings:

  • 200 ml whipped cream
  • 2 liters of vegetable broth
  • 1 jar sausages
  • 450 g potatoes
  • 300 g carrot(s)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel the potatoes and carrots and dice them into small cubes. Cook them in the vegetable broth until tender. Then remove about 1/3 of the diced potatoes and carrots and puree the remaining soup. Slice or dice the sausages, add them to the soup along with the diced potatoes and carrots and the whipped cream. Heat through, and season with salt and pepper.
