Vanilla quark rolls

Ingredients for 4 servings:

  • 50 g butter
  • 70 g sugar
  • 250 g quark
  • 1 packet of vanilla sugar
  • 2 tsp baking powder
  • 300 g flour
  • 1 packet of vanilla pudding powder for cooking
  • 2 tbsp milk
  • 100 ml water, boiling
  • 2 eggs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Whisk the pudding mix with the milk until smooth, then mix with the boiling water, stirring quickly. Melt the butter and mix with the sugar, vanilla sugar, quark, and eggs. Now stir in the vanilla pudding mix. Fold in the flour and baking powder. Scoop out the dough with a tablespoon and a teaspoon (about the size of a golf ball) and spread it on a baking sheet. Bake the rolls at 200°C (top/bottom heat) for about 20 minutes. I use two baking sheets. Halfway through the baking time, I change the oven rack to ensure they are cooked thoroughly on all sides. If desired, you can also fold in chocolate chips or raisins. A beaten egg yolk for brushing gives them a nice shine. The rolls can also be frozen. To thaw, either remove them from the freezer two hours before consumption or bake them briefly.
