Transylvanian curd dumplings

Ingredients for 4 servings:

  • 500 g quark (low-fat quark)
  • 2 eggs
  • 200 ml semolina
  • 1 pinch of salt
  • Flour
  • 100 g sugar
  • 100 g breadcrumbs
  • butter
  • e.g. jam

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Quark dumplings Austrian – Transylvanian style

Mix the quark with the semolina, eggs, and a pinch of salt, knead thoroughly, and let rest for at least 30 minutes. Form the dough into dumplings, dusting your hands with a little flour if necessary to prevent stickiness. Alternatively, form the dumplings with a large spoon. Drop the formed dumplings immediately into a large pot of boiling water. As soon as the dumplings float, they’re done. Melt butter in a pan and lightly brown the sugar and breadcrumbs. Be careful not to burn them. Roll the finished dumplings in the pan with the breadcrumbs to give them a crumbly crust. Serve immediately, warm, with jam. Rosehip jam (Hetschenpetsch) goes best, but apricot jam also works well.
