Chanterelles Italian style

Ingredients for 2 servings:

  • 500 g chanterelles
  • 100g bacon
  • 4 shallots
  • 2 garlic cloves
  • 3 tbsp olive oil
  • 2 tbsp tomato paste
  • 3 tbsp, leveled flour
  • 250 ml broth
  • 1 jar white wine
  • 3 tomatoes or 1 can of tomatoes, chopped, approx. 400 g
  • ½ pack of Italian herbs, frozen
  • salt and pepper
  • possibly parsley

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Clean the chanterelles and set aside. Dice the bacon, chop the shallots, and garlic. In a pan, fry the bacon in 1 tablespoon of oil, add the shallots and garlic, and fry. Add the tomato paste and sauté briefly. Add the remaining olive oil and fry the chanterelles. Sprinkle the flour over the mushrooms and deglaze with the broth and white wine. Add the tomatoes and frozen herbs and simmer for about 5 minutes. Season with pepper, salt, and freshly chopped parsley, if desired. Serve with boiled potatoes or pasta. Approx. 550 kcal per serving.
