- 300 g flour
- 5 eggs
- 6 rolls, stale
- Salt
- Water, cold
- n. B. onion(s)
- n. B. Speck
- e.g. parsley
- Water (salt water)

Dumplings made from spaetzle dough and bread rolls
Cut the rolls into 1 cm cubes. Mix the flour, eggs, a pinch of salt, and, if needed, cold water to form a thin spaetzle batter (the batter should have the consistency of pancake batter). Now add the bread cubes to the batter and mix everything together by hand. Don’t let the batter stand; IMMEDIATELY form orange-sized dumplings. It’s important to spread the batter around the dumpling with wet hands so that the dumpling doesn’t get soggy during cooking. Immediately after forming, place the dumplings in plenty of boiling salted water. Cook them gently, turning occasionally, for about 20-25 minutes. Tip: To refine the dumplings, you can add onions, bacon, and parsley, previously sautéed and cooled in a pan, to the spaetzle batter. All kinds of roasts with sauce go well with this. The dumplings are also delicious sliced and fried in butter!
