Cut the rolls into thin slices and place in a large bowl. Peel and dice the onion. Melt the butter in a saucepan. Sauté the diced onion until translucent and then sprinkle over the rolls. Bring the milk to a boil in the same saucepan and pour it over the rolls. Let the rolls sit in the milk, butter, and onion mixture until they are cool enough to handle. Bring a large pot of lightly salted water to a boil. Knead the roll dough with your hands. Add the eggs and parsley, and knead again. Add the flour and knead again. The dough should not be too sticky or too dry. With wet hands, form dumplings from the dough and cook in lightly simmering salted water until the dumplings float to the top.
