Pretzels with sesame and black cumin

Ingredients for 1 servings:

  • 230 g wheat flour
  • 20 g tapioca flour
  • 1 tbsp, heaped sesame seeds
  • 1 tbsp, heaped black cumin seeds
  • 4 tbsp peanut oil
  • 110 g water
  • 1 tsp sugar
  • 6 g beef broth, granulated
  • 15 g dry yeast
  • 1 sheet of baking paper
  • 2 tbsp sesame seeds
  • 1 tbsp black cumin seeds
  • 1 tsp salt
  • 5 tbsp pretzel lye (baker’s lye)
  • 1 egg white

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 35 minutes

Spicy pretzels in oriental style, makes 6 servings

Mix the ingredients, from wheat flour to peanut oil, in a food processor. Heat the water, sugar, and meat broth until lukewarm. Add the yeast and mix thoroughly. Let it rise slightly, then add it to the flour mixture and knead for at least 10 minutes. If the dough is too stiff, add a little water. Cover the bowl with a damp cloth and let the dough rise for 30 minutes. Moisten a baking sheet and line it with baking paper. Mix the baker’s lye with half of the egg whites. Mix the other half with 3 tablespoons of water and set aside. Mix the sesame seeds, black cumin seeds, and salt in a small bowl and set aside. Knead the dough and divide it into six equal parts. Roll out each part into a double-conical snake (i.e., significantly thicker in the middle than at the ends) about 60 cm long. Shape it into a pretzel and place it on the baking sheet. Score the pretzels in the middle with a sharp knife. Cover with a cloth and let rise for 30 minutes. Brush the pretzels with the egg white and water mixture. Wait five minutes, then brush with the egg white and baker’s lye mixture. Place in the oven preheated to 220 degrees Celsius. After 10 minutes, reduce the temperature to 200 degrees Celsius. When the pretzels begin to brown, remove the baking sheet from the oven. Brush each pretzel with the egg white and water mixture and immediately sprinkle with the salt and seed mixture. Return to the oven and finish baking. They taste best when brushed with butter while still warm. Enjoy.
