Ingredients for 2 servings:
- 250 g scallop(s), frozen, thawed
- 60 g tomatoes, dried in oil, very finely diced
- 2 garlic cloves, very finely chopped
- 1 tbsp olive oil
- 100 g sour cream
- 1 tbsp red wine
- 40 g Parmesan, grated
- Thyme
- rosemary
- basil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Brown the scallops all over in a little olive oil. Place in two small baking dishes. Mix the sour cream with the tomatoes, red wine, garlic, and herbs, fold in the Parmesan, and spread the mixture over the scallops. Bake in a preheated oven at 200°C for about 15 minutes. Serve with baguette or toast.
