Hessian Italy – Gnocchi, spinach, and beef sausage casserole

Ingredients for 3 servings:

  • 500 g gnocchi
  • 250 g leaf spinach, frozen
  • 300 g cherry tomatoes
  • 1 small onion(s)
  • n. B. garlic clove(s)
  • 2 sausages (beef sausages)
  • 1 ball of mozzarella, approx. 200 g
  • 1 shot of wine
  • some cream
  • 1 tbsp, heaped tomato paste
  • 1 pinch(s) of sugar
  • salt and pepper
  • some oregano

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Fry the gnocchi in a little oil until lightly browned, then place in a baking dish. Preheat the oven to 220°C (top/bottom heat). Purée the tomatoes, dice the onions, and slice the beef sausages. Place the frozen spinach in a pan and thaw while stirring. Add the diced onions and fry. Deglaze both with a splash of wine. When the wine is almost evaporated, add the puréed tomatoes. Stir in the tomato paste, press in the garlic, and season the spinach with sugar, salt, and pepper to taste. Now add the cream and beef sausage and sprinkle everything with a little oregano. Season the spinach sauce one last time, pour it over the gnocchi, and mix well. Tear the mozzarella into small pieces and spread it on the casserole. Place the casserole in the oven to bake and bake until the mozzarella is golden brown.
