Turkey thigh in the Optigrill

Ingredients for 4 servings:

  • 1 kg turkey thigh(s), with or without bone
  • some oil or fat for frying
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes

Insert the baking dish and preheat to 270°C. Add a little oil or any fat you like for frying. Place the turkey thigh, skin-side down, on the dish and let it cook for a few minutes, if desired. Reduce the temperature to 180°C. Close the lid and roast for 80-90 minutes. Some juices will come out. At the end, if you like, you can turn the thigh over and let the skin grill; I generally don’t like poultry skin to be crispy. Note: Half an hour before the end of the cooking time, you can add any vegetables you like to the dish. I usually use cauliflower and tomatoes; in the photo, it was asparagus season with brown mushrooms and tomatoes. Beans need to cook longer than most other vegetables. Then season to taste. I’m a purist and mainly use salt and pepper.
