Quick garlic and herb bread

Ingredients for 1 servings:

  • 2 cups wheat flour, type 1050
  • 1 cup low-fat milk
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp. baking soda
  • 1 pinch of nutmeg
  • 1 packet of baking powder
  • 3 garlic cloves
  • 1 pack of frozen herbs
  • 1 tbsp olive oil
  • 2 tbsp herbs, dried

Use a mug (approx. 200 ml) as a measure. Preheat oven to 200°C (gas mark 3, fan oven 180°C). Place the flour, milk, oil, spices, and baking powder in a bowl. Using the dough hook of a mixer, knead into a smooth dough. If the dough is too sticky, add a little flour and one or two tablespoons of mineral water to loosen it. Peel and finely chop the garlic cloves, and press them through a garlic press. Mix the frozen herbs into the dough and season to taste. Brush the loaf pan with 1 tablespoon of olive oil and sprinkle the dried herbs evenly. Pour in the dough. Dip a spatula in cold water and smooth the surface. To prevent the bread from becoming too dry, place an ovenproof mug filled with water on the rack. Bake on the second rack from the bottom for 30 minutes. After the baking time is over, pierce the bread with a wooden skewer. If nothing sticks to the skewer, the bread is done. Remove from the oven, let it cool briefly in the pan, and then remove it.
