Simple chicken breasts with tomatoes from the oven

Ingredients for 3 servings:

  • 400 g chicken breasts
  • 4 m.-large tomato(s), ripe
  • 200g mozzarella
  • 2 carrots
  • 1 bell pepper(s), red or orange
  • 2 bags of rice
  • salt water
  • salt and pepper
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Preheat the oven to 200°C. Peel and wash the carrots, and slice them thinly. Deseed and wash the tomatoes and peppers, then slice or stick them. Drain the mozzarella well and slice them. Wash and dry the chicken breasts. Season them with salt and pepper on both sides. Briefly fry them in a hot pan with oil. After frying, place them in a baking dish and arrange the carrots and peppers on top. Top with the tomato slices. Season the tomatoes with a little more pepper and salt if desired. Then scatter the mozzarella over the top. Place the filled baking dish in the preheated oven for about 25 minutes. Meanwhile, bring a pot of salted water to a boil and then prepare the rice according to the package instructions.
