Ingredients for 4 servings:

  • 200 g basmati rice
  • 100 g bell pepper(s), red
  • 100 g chorizo, mild
  • 100 g peas, frozen
  • 125 g seafood, frozen, optional
  • 400 ml water, hot
  • 1 cube of chicken stock or vegetable stock
  • 1 pinch of saffron
  • 1 tbsp tomato paste
  • 200 g chicken breast fillet(s)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 16 minutes; Total time approx. 41 minutes

Cut the bell pepper and chorizo ​​into pieces. Place the rice, bell pepper, sausage, peas, any seafood, and hot water in a microwave-safe bowl (approx. 1.5 l capacity) and stir. Stir in the stock cube, saffron, and tomato paste, then microwave with the lid closed at 750 watts for 8 minutes. Let stand for 5 minutes. Add the salt, pepper, and meat, stir, and microwave for another 8 minutes. Let stand for 5 minutes, stir again, serve, and enjoy. Tip: Oven cooking requires double the cooking time at 190°C fan-assisted.
