Ingredients for 1 servings:

  • 300 g wheat flour
  • 700 g rye flour
  • 60 g yeast
  • 1 tsp sugar
  • 4 tbsp milk, lukewarm
  • 1 pinch of salt
  • 2 tbsp sunflower oil
  • 500 ml water, lukewarm

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 30 minutes

Mix the wheat and rye flour in a bowl. Make a well in the bowl. Stir the yeast with the sugar, lukewarm milk, and about 1 tablespoon of flour to form a starter dough. Pour the dough into the well and cover the bowl and keep warm for 20 minutes. Add the salt, oil, and lukewarm water to the starter dough. Mix all ingredients well for about 10 minutes until you have a smooth dough. Form the dough into an oblong loaf, place it on a baking sheet lined with baking paper, cover with a tea towel, and let it rise in a warm place for about 40 minutes. Bake the bread at 180°C for about 60 minutes.
