Indian asparagus

Ingredients for 4 servings:

  • 1.2 kg asparagus
  • 2 tbsp butter
  • 2 tbsp, leveled spice mix (gomasio, sesame salt), or roasted and crushed sesame seeds
  • Salt
  • e.g. curry powder
  • 1 tbsp mint, chopped

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Peel the asparagus, trimming off any woody ends. Grease a baking dish with a little butter and add the asparagus. Lightly salt. Distribute butter flakes over the asparagus and sprinkle generously with curry and gomasio. If you don’t have gomasio, you can also use toasted and crushed sesame seeds. Seal the baking dish tightly (I do this with a piece of aluminum foil; you can always use that) and bake in the oven at 175°C for about 40 minutes. Sprinkle with mint before serving.
