for 4 pieces

Dough: Place the flour in a bowl, knead with the butter, sugar, and vanilla sugar to form a smooth dough, then add the egg. Shape into a roll about 5 cm thick, wrap in cling film, and let rest in the refrigerator for 30 minutes. Preheat the oven to 180°C. Line a baking tray with baking paper. For the topping, peel and core the apples, then thinly slice them. Then divide the dough into four pieces. Roll each out about 0.5 cm thick and shape each into a round shape. Mix the marzipan with the powdered sugar and egg white until smooth and spread evenly over the dough portions. Arrange the apple slices on top in a star shape. Mix the apricot jam with water on a low heat until smooth. Brush the apples lightly with this mixture. Place the tarts on the baking tray and bake in the oven for 15 minutes. Brush the apples again with the jam mixture. Bake for another 10 minutes.
