Ingredients for 4 servings:

  • 1 kg fish fillet(s) (e.g. pollock)
  • 500 g spinach, fresh, blanched
  • 2 tbsp olive oil
  • 2 bunches of parsley
  • 3 garlic cloves
  • 200 ml cream, salted
  • salt and pepper
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Place blanched spinach in a greased baking dish, season with salt and pepper, and drizzle with olive oil. Add a little garlic, if desired. Place the salted and marinated fish on top and cover with a mixture of pureed parsley and garlic. Pour in the salted cream and bake at 200°C (top/bottom heat) for 30 minutes. Variation: Layer crab or cook shrimp with the fish. The sky’s the limit.
