Salmon fillet with oranges and almonds in the Omnia

Ingredients for 4 servings:

  • 500 g salmon fillet(s) without skin
  • 2 large organic oranges
  • 1 clove(s) garlic
  • 1 tbsp honey, liquid
  • 2 tbsp olive oil
  • 1 tsp herbs de Provence
  • Salt
  • chili flakes
  • 1 tbsp, heaped almond flakes
  • 1 tbsp fresh herbs (chives or basil)

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Rinse the salmon, pat dry, and cut into 4 equal fillets. Wash an organic orange and cut it crosswise into thin slices, including the peel. Line the silicone mold of the Omnia oven with the orange slices, overlapping them. Peel the garlic clove and slice it thinly. Distribute the garlic over the orange slices. Place the salmon fillets on top of the orange slices. Squeeze the second orange. Mix the juice with honey, olive oil, and Provençal herbs and pour over the fillets. Lightly salt the fillets and sprinkle with chili flakes. Sprinkle with flaked almonds. Close the Omnia oven and place it on the stovetop. Cook for 5 minutes over high heat and then for 15-20 minutes over low heat. My salmon was translucent after 15 minutes, which is how we like it. Sprinkle with chopped fresh herbs before serving. Serve with baguette and salad. Note: I cooked salmon for three people (see photo), but four fillets (500 g) also fit in the Omnia with some overlap.
