Cucumbers in beer

Ingredients for 1 servings:

  • 1 large cucumber(s), about 800 g
  • some salt water, boiling
  • 1 lemon(s), organic
  • 375 ml beer, dark
  • 2 tsp sugar
  • 1 tsp, leveled salt
  • 2 tsp. preserving aid

Instructions

Working time approx. 20 minutes; Rest period approx. 2 days; Total time approx. 2 days 20 minutes

Peel the cucumber and trim the ends. Halve the cucumber lengthwise, remove the seeds, and then cut crosswise into strips. Add the cucumber strips to a little salted water, bring to a boil, bring back to a boil, and then drain in a sieve. Wash the lemon in hot water, dry it, and grate the zest from half. Halve the lemon and squeeze the juice from one half. Cut two slices from the other lemon half. Bring the beer to a boil in a saucepan with the lemon zest, juice, sugar, and salt. Add the cucumber strips and simmer over low heat for about 5 minutes. Remove the pan from the heat and stir in the preserving agent. Place the cucumber strips and lemon slices in a prepared jar and seal immediately. Let the cucumbers marinate for 2-3 days.
