Ingredients for 2 servings:
- 125 g chickpea pasta (spirelli), or other pasta alternative
- 1 m.-sized mango(s)
- 1 stalk(s) leek
- 1 tbsp, heaped cream cheese with chili
- 70 g sour cream
- e.g. sunflower oil
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Prepare the spirelli according to the package instructions, but do not overcook. Drain the pasta. Mix the sour cream and cream cheese thoroughly. While the pasta is cooking, peel and dice the mango and cut the leek into 5-7 mm thick rings. Sauté the leek in a little oil for 15 minutes until soft. Add the mango cubes to the leek and heat through. Then add the pasta and the cream cheese mixture. Mix everything thoroughly and heat through. Season to taste and serve immediately.
