Ingredients for 1 servings:

  • 900 g sour cherries, pitted
  • 500 g gelling sugar 2:1
  • 1 sachet of citric acid
  • 50 ml cherry brandy
  • 70 g dark chocolate 70%, finely chopped

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 4 minutes; Total time approx. 1 hour 4 minutes

In a saucepan, combine the cherries with the gelling sugar and kirsch. Let the mixture stand for 1 hour to draw juice, stirring occasionally. Then bring everything to a boil. When it’s bubbling, boil for 3 minutes. Then add the citric acid and let the jam boil for another 1 minute. Remove the pan from the heat. When the mixture stops bubbling, quickly stir in the chocolate. Immediately fill the jam into prepared twist-off jars. Screw the lids on the jars and turn upside down. Let the jars stand for 6 minutes, then turn them upside down. Let the jam cool. This quantity makes about 6 jars of 200g each. An incomparable taste of cherries, chocolate, and kirsch. There’s hardly any alcohol left, as much evaporated during cooking. However, it’s important for the overall flavor.
