Plum – Blueberry – Tomato – Jam

Ingredients for 5 servings:

  • 650 g plum(s)
  • 200 g berries (blueberries)
  • 150 g tomatoes
  • 500 g gelling sugar (1:3)
  • 2 cm ginger
  • 1 tsp cinnamon
  • 1 vanilla pod(s)

cooked in the Thermomix (but also works without)

Wash, stone, and halve the plums, along with the blueberries and tomatoes. Roughly chop the tomatoes. Peel and slice the ginger. Scrape out the vanilla pod. Drop the ginger, tomatoes, and fruit onto the rotating blade at speed 3. Blend everything for about 20 seconds at speed 10, then reduce to speed 2. Add the sugar, cinnamon, and vanilla seeds. If you don’t like it too sweet, you can add a few squeezes of lemon or lime. I set the cooking time to 15 minutes at 100°C and cooked the whole thing at speed 2. If you don’t have a Thermomix, blend the fruit and follow the instructions on the sugar packet.
