Bacon Jam Burger à la Carsten

Ingredients for 4 servings:

  • 250g bacon
  • 2 onions
  • 50 ml date syrup
  • 10 ml apple cider vinegar
  • 20 g brown sugar
  • 50 ml mayonnaise
  • 25 ml mustard
  • 35 ml ketchup
  • 2 small gherkins
  • ⅛ onion(s), grated
  • 1 tbsp cucumber water
  • 4 burger buns
  • 50 g smoked bacon
  • 500 g minced beef
  • 4 slices of cheddar cheese
  • 1 tsp black pepper, coarsely ground
  • ½ tsp salt
  • ½ tsp coriander seeds
  • ½ tsp mustard seeds, yellow
  • ½ tsp brown sugar

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

First, cut the bacon and fry it in a pan until crispy. In the meantime, dice the onions. After 7-10 minutes, remove the bacon from the pan and fry the diced onions in the same pan. Add the date syrup, apple cider vinegar, and brown sugar and let it simmer for a while. Then puree everything together. For the burger sauce, mix the mayonnaise, mustard, ketchup, diced cucumbers, grated onion, and cucumber juice. Grind the pepper, salt, coriander seeds, yellow mustard seeds, and brown sugar in a mortar and pestle. Briefly fry the buns in the bacon pan along with the smoked bacon and set aside. Form the ground beef into balls, place them in the pan, and flatten with baking paper. Season the tops with the ground mixture, turn over, and season the other side as well. Place a slice of cheddar cheese on each slice of meat, add a little water to melt the cheese, and cover the pan for about 20 seconds. Spread the bacon jam on one side of the buns and the burger sauce on the other side. Then place the meat and pickles between them.
