Ingredients for 2 servings:

  • 1 zucchini
  • 1 carrot(s)
  • 2 eggs
  • 50 g Gouda, grated
  • some salt and pepper
  • 1 spring onion(s)

Preheat the oven to 180°C fan/convection oven and line a baking sheet with baking paper. Wash the zucchini, spring onion, and carrot, and peel the carrot. Slice the spring onion into fine rings and grate the zucchini and carrot. Be careful, the zucchini may lose a lot of water. Tip: Squeeze the grated zucchini in a cloth before further processing. Mix everything in a small mixing bowl with the cheese, the two eggs, pepper, and salt. Form the mixture into small patties and place them on the baking sheet. You’ll get about six patties from the listed ingredients. Place in the hot oven for 15-20 minutes, then enjoy.
