Peel the carrot. Then, using a vegetable peeler, slice the carrot into thin, not too thick strips. Pour the oil into a pan so that the carrot strips float in it or everything is covered. Fry the carrots in the oil for about 3 minutes; they will turn yellow-golden-pink. Remove the carrots from the pan and let them sit for 2 minutes to crisp up. If you like, you can sprinkle some salt over them.
