Ingredients for 4 servings:
- 4 herring fillets (double fillets)
- 3 bell peppers, red
- 1 onion(s)
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 tbsp water
- salt and pepper
- 60 g rocket
- 3 tbsp olives (Taggiasca olives)

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

Clean the peppers, quarter them, and grill them under the broiler until blackened. Cover with a damp cloth and let stand for a while. Peel and chop finely. Mix the balsamic vinegar with olive oil, water, pepper, and salt. Finely slice the onion. Mix the pepper pieces, onions, and olives with the dressing and let marinate for a while. Tear the rocket into small pieces and arrange on a plate. Place the herring on top and top with the marinated pepper pieces. Serve with bread or boiled potatoes.
