Grapefruit-Mango-Pomegranate Jam

Ingredients for 1 servings:

  • 9 large grapefruits
  • 3 mangoes
  • 2 large pomegranates
  • 850 g sugar

Instructions

Halve the grapefruits, squeeze them, and add the juice, including the flesh, to a saucepan. Peel the mango and dice it. Deseed the pomegranates and squeeze the juice from the seeds. Add both to the grapefruits and add the sugar. Let this mixture steep for at least 1 hour. Heat the mixture and simmer for 15 minutes. Then puree the mixture with an immersion blender until smooth and continue to reduce, stirring constantly to prevent burning. This takes about 1.5 hours. Do a set test. If the set test is successful, pour the mixture into rinsed twist-off jars while it’s still hot, seal tightly, and let cool. Important information: This recipe does not require gelling sugar; the grapefruits provide the necessary pectin. If you prefer a slightly more tangy flavor, you can reduce the amount of sugar.
