Pancakes filled with apples

Ingredients for 2 servings:

  • 100 g flour
  • 200 ml milk
  • 2 eggs
  • 1 pinch of salt
  • 2 apples
  • 30 g raisins
  • 20 ml rum
  • 30 ml egg liqueur
  • 1 tbsp sugar
  • 1 tsp cinnamon
  • 2 tbsp lemon juice
  • butter
  • powdered sugar
  • vanilla sauce

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 20 minutes

Soak the raisins in rum for at least 1 hour. Mix the flour, milk, eggs, and salt into a batter and let it rest for 30 minutes. Peel, quarter, core, and finely chop the apples. Add the lemon juice to the apples. Melt a little butter in a pan and add the sugar. When the sugar begins to caramelize, add the apples and sauté over moderate heat. Add the raisins and egg liqueur to the apples and season with cinnamon. Fry thin pancakes in a little butter in a pan. Spread the filling on the pancakes, roll them up, sprinkle with powdered sugar, and serve with vanilla sauce. If you don’t want alcohol, soak the raisins in apple juice and omit the egg liqueur.
