Ingredients for 4 servings:

  • 100 g oat flakes, fine
  • 100 g flour
  • 1 pinch of baking powder
  • 4 large eggs, separated
  • ½ liter of milk
  • 1 tbsp oil
  • 1 packet of vanilla sugar
  • some salt
  • some mineral water
  • Coconut oil or clarified butter for frying
  • 2 apples (Boskop)
  • Cinnamon for sprinkling
  • Powdered sugar for sprinkling

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix oatmeal, flour, baking powder, vanilla sugar, egg yolks, milk, and oil into a thick batter, add a little salt, and let it rest for 15 minutes. During this time, prepare the ingredients for the topping: Wash and peel the apples, removing the cores with a corer. Cut the apples into 5mm thick rings. Beat the egg whites until stiff and fold into the batter. Thin the batter with mineral water until it runs thickly from the spoon. Line a heated frying pan with fat and apple rings. Then pour the batter over the apples. Cover and bake. Slide the apples onto a plate, sprinkle with cinnamon and powdered sugar, and serve immediately.
