Apple curd pancakes

Ingredients for 4 servings:

  • 3 eggs
  • 250 g quark
  • 200 ml cream, milk or buttermilk
  • 250 g flour (wheat flour)
  • 1 tsp baking powder
  • 1 dash of vegetable oil
  • 2 apples (Boskop)
  • Maple syrup or cinnamon sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Separate the eggs. Beat the egg whites until stiff peaks form. Combine the remaining ingredients (minus the apples). Peel the apples, slice them thinly, and fold them into the beaten egg whites. No sugar is added to the batter, as the pancakes are eaten with maple syrup or cinnamon sugar. Cook three pancakes in one pan at once, making them easier to flip.
