Ingredients for 6 servings:
- 500 g pasta of your choice
- 500 g salmon fillet(s)
- 500 g broccoli, frozen
- 500 ml coconut milk
- 400 ml cream
- 2 small limes
- 200 g peanuts
- 1 tbsp vegetable stock
- 200 g mozzarella, grated
- Salt
- pepper
- curry
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Cook the noodles according to the package instructions until they still have a bit of a bite. Heat the coconut milk and cream in a saucepan. Squeeze the limes and add them. Season with salt, pepper, and curry powder. Add the peanuts and blend with an immersion blender until the peanuts are well ground. Place the salmon in the casserole dish. Then spread the noodles and broccoli on top. Pour the sauce over the noodles and sprinkle with cheese at the end. Place the casserole in a preheated oven at 200°C for about 30 minutes.
