Trout on a bed of onions

Ingredients for 1 servings:

  • 1 trout or sea bream
  • ¼ bunch herbs, fresh Italian
  • 1 large onion(s)
  • Salt
  • black pepper
  • olive oil
  • 1 lemon(s) (organic)
  • 2 tsp herb butter
  • Baguette(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Wash the trout and pat it dry inside and out. Spread out a large piece of aluminum foil, enough to wrap the trout completely. Peel the onion and slice it into thin rings, seasoning with salt and pepper to taste. Now spread the onion rings on the aluminum foil, just enough to ensure the trout sits nicely on the rings. Spread 1 teaspoon of herb butter, 1 tablespoon of olive oil, and 2 slices of lemon over the onions. Season the trout inside and out with salt and pepper, and spread 1 teaspoon of herb butter into the abdominal cavity. Spread the herbs and 2 slices of lemon on top. Place the trout on the bed of onions and cover tightly with aluminum foil. Preheat the oven to 180°C fan/convection oven. Cook the fish in the oven for 35 minutes. Serve with fresh baguette.
