Fruity, fiery vegetables with feta cheese

Ingredients for 4 servings:

  • 3 tomatoes
  • 1 bell pepper
  • 1 zucchini
  • 2 feta cheeses
  • ½ onion(s), roughly chopped
  • 3 cloves garlic
  • salt and pepper
  • Thyme
  • rosemary
  • curry powder
  • Chili, ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Perfect barbecue side dish and easy to prepare!

Roughly dice the tomatoes, bell peppers, and zucchini and season with salt and pepper in a large baking dish. Add the chopped onions and garlic. Toss the vegetables well with oil and let them rest. Then add the diced cheese and season to taste. If you like it spicy, you can add ground chili. Stir the mixture again well to ensure everything is coated with oil. Place the vegetables in the oven at 200 degrees Celsius for 15 minutes. Stir the mixture occasionally to prevent burning. Serve hot; the vegetables also taste great with grilled food.
