Pak Choi sweet and spicy

Ingredients for 4 servings:

  • 4 large pak choi
  • 2 tbsp peanuts, coarsely chopped
  • 2 cm ginger root, grated
  • 2 garlic cloves
  • some coriander, fresh, chopped
  • 10 black peppercorns, crushed
  • some lemon juice
  • 4 tbsp chili sauce, (sweet & sour sauce)
  • 1 tbsp soy sauce
  • 4 tbsp rapeseed oil
  • 1 ½ dl vegetable broth
  • Salt
  • possibly chili pepper(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Asian side dish

Trim the top green leaves from the pak choi, then halve lengthwise. Mix the coriander, ginger, and pepper with the lemon juice, chili sweet and sour sauce, soy sauce, and oil, then press in the garlic. Bring the broth to a boil in a pan. Add the pak choi and pour the spiced marinade over it. Bring to a boil, cover, and simmer over low heat for 15 minutes, stirring occasionally. Season with salt and pepper to taste and sprinkle with the peanuts. This goes well with grilled or roasted meat or fish. If you like it very spicy, you can add fresh, finely chopped chilies to the broth.
