Bell peppers with tomatoes and onions

Ingredients for 4 servings:

  • 500 g bell pepper(s), green
  • 350 g tomatoes
  • 500 g onion(s)
  • 60 g butter (or margarine)
  • 1 clove(s) garlic
  • 1 tbsp basil
  • Salt
  • pepper
  • ½ bunch parsley

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the bell peppers into thin strips and dice the onions. Pour boiling water over the tomatoes and peel them. Cut the tomatoes into small pieces. Heat butter (or margarine) in a saucepan. Roast the onions and crushed garlic clove until light yellow. Add the bell pepper strips. Cover and sauté over medium heat for about 10 minutes. Add the tomatoes, basil, salt, and pepper. Cover and sauté for another 5 minutes. Rinse the parsley under cold water, pat dry, and finely chop. Sprinkle the bell peppers with the parsley before serving.
