Scallop – Mango – Spring Onion Salad

Ingredients for 6 servings:

  • 1 kg scallop(s), in my case they were thawed frozen scallops
  • 2 mangoes
  • 2 bunch spring onions
  • 2 kiwis
  • 1 lime(s), organic
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Fry the scallops in batches on both sides. Peel the mangos and cut into clam-sized pieces or strips. Trim the top third to half of the spring onions and the roots, peel off the outer skin, and slice. Slice the kiwis. Zest the limes and squeeze the juice. Season with salt and pepper, and pour the lime juice over the mixed ingredients. Let it marinate.
