Ingredients for 4 servings:
- 1 small onion(s)
- ½ melon(s) (Charentais)
- 4 tbsp vinegar (white wine vinegar)
- 8 tbsp olive oil
- 5 tbsp meat broth
- salt and pepper
- Sugar
- 300 g roast beef in thin slices
- 150 g crème fraîche
- 100 g quark
- 2 tbsp chives, cut into rolls

Finely dice the onion and melon. Combine both with the vinegar, broth, and oil, and season with salt, pepper, and sugar. Drizzle the roast beef with the dressing and let it stand, covered, for at least 30 minutes. Mix the crème fraîche with the quark and chives, and season with salt and pepper. Arrange the roast beef on a plate and serve with the quark cream. Serve with baguette.
