Ingredients for 4 servings:
- 4 large peaches, ripe
- 2 tbsp almonds or pine nuts, peeled
- 50 g dark chocolate
- 50 g biscuit(s) (e.g. almond macaroons)
- 2 tbsp powdered sugar
- 1 small egg(s)
- 1 vanilla pod(s)
- 125 ml milk
- 125 ml cream
- 4 eggs, very fresh
- 4 tbsp sugar
Instructions
Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes
Fresh peaches baked with chocolate, with a fine vanilla sauce
Briefly blanch the peaches in boiling water, rinse with cold water, and peel them. Then halve them, remove the stones, and place them cut-side up in an ovenproof dish. Preheat the oven to 200°C. Mince the almonds, biscuits, and chocolate using a food processor or finely chop them. Mix with the powdered sugar and egg and spread them on the peach halves. Bake the peaches in the middle of the hot oven for about 20 minutes. Then let them cool for about 10 minutes. Meanwhile, split the vanilla pod lengthwise and scrape out the seeds. Heat the seeds and pod in a saucepan over medium heat. Place the egg yolks and sugar in a metal bowl and beat over a hot water bath until light and creamy. Gradually stir in the milk mixture (without the pod). Continue beating the cream until thickened. Stir the vanilla sauce into a bowl of iced water until cold and serve with the lukewarm peaches. Other fruits, such as fresh apricots or fresh figs, are also suitable.
